Great question. As you know, lactose is the principal sugar in milk. But lactobacillus and other bacteria used to ferment dairy break down the lactose into glucose and galactose in order to use the glucose as a fuel source to multiply. The galactose is a viable but less preferred fuel source. So overall, the less sweet a fermented dairy product is (the sourer the cream, or the savorier the cheese) the less sugar it has overall. Very heavy creams have intact lactose levels (as they are not fermented) but they have a much higher fat content than milk, reducing the sugar:fat ratio.

I was in good physical condition when I started and was fairly used to doing long runs without necessairly eating anything before. But I did enjoy bread, pasta, rice, tortillas, chips, oatmeal, granola, the occasional apple pie, and so on. So I’m pleased to cut back on that. I’m not a vegetarian but I ate meat sparingly, enjoying beans and lentils often for proteins, fiber, vitamins. Since I started the test I’ve been eating a LOT more meat, and I’m finding that a bit hard. I just don’t enjoy eating that much meat (and I worry about what it means for heart health). Have also been eating a lot of cheese too, to help fill up (and to keep up the fat intake–aged, hard cheeses, or goat, brie). Also eating plenty of vegetables too. But it’s just hard to fill up on veggies (with potatotes, beans, and other things aren’t allowed) when you’re running 30 miles a week or so. Anyway, what I’m ultimately wondering is, What next after the test? Beans and lentils are definitely coming back, and an oatmeal/porridge breakfast never seemed like such a bad thing. (Hard to imagine life without pasta or pizza too.) In sum, I’m keen to keep training my body to burn fat on runs, and to break sugar and carb dependence, but what’s what’s the ultimate place of wheat, gluten, pasta, grains, beans, lentils, dairy (or beer, for that matter), in a healthy, efficient runner’s diet?

I do know I’ll be more mindful of which foods I reintroduce for health’s sake and will be watching sugar (NO cravings and I typically have some candy every Friday!) but perhaps this much fat is really too much fat for my body? I’m trying to listen to my own body to tell, but if you’ve experienced others who have had similar results that would be helpful to know too. Enjoying the no headaches, no cravings today, but perhaps I will cut this short and try some potatoes and rice this week and see if there are any changes?
