But lactobacillus and other bacteria used to ferment dairy break down the lactose into glucose and galactose in order to use the glucose as a fuel source to multiply. The galactose is a viable but less preferred fuel source. So overall, the less sweet a fermented dairy product is (the sourer the cream, or the savorier the cheese) the less sugar it has overall. Very heavy creams have intact lactose levels (as they are not fermented) but they have a much higher fat content than milk, reducing the sugar:fat ratio.
