I have a history of hypothyroidism / malabsorption / digestive inflammation. Currently all carbohydrates are causing excessive bloating. I have been mostly off of gluten for years, but now potatoes, corn based and rice based products also cause me distress. I have also discovered I am allergic to eggs, peanuts and legumes. The list of foods I need to stay away from continues to grow, and the bloating and weight gain continues to increase. I have attempted several paleo type diets, however I can never get past the first two weeks. I am fuzzy headed, irritable and exhausted. It is nearly impossible to focus at work and it IS impossible to exercise. These are the only diets that have had any impact on my weight. All of these diets indicate that these symptoms should ebb, however I have never had that experience. Do you have any recommendations on how to mitigate these symptoms?
