The combination of (1) and (2) allows them to continue training/working at very high rates, and keeping their aerobic engines strong. But this does not mean that an elite athlete who ingests 4,500 calories a day is somehow shackled to the corn and potatoes train. (They’re not). It’s easier to get that amount of calories that way, but it’s also possible to get them from fats. An elite athlete who eats a high-calorie, relatively high-fat diet has to pace him/herself more throughout the day, but not by much. It’s not that it can’t be done, or that it’s incredibly difficult—it’s just easier to eat the carbs, particularly when your aerobic engine (and your rate of fuel usage) can afford it.

I am a little confused regarding burning fat and racing MAF heart rate. I understand that training 80% at MAF develops your aerobic system and by reducing processed carbs, sugars and increasing good fats you are training your body to use fat as it’s primary energy source. Is there anytime you would tap into blood glucose or muscle glycogen stores if you remained below or at MAF HR? Or is the point in becoming efficient to use more fat as energy and hence maintain your glycogen reserves for later in the race? Why does your body stop using fat as an energy source and switch to glycogen if you remain at or below MAF? Especially as you have pointed out your body stores unbelievable amounts of fat compared to glycogen (which also needs to be stored with water).

I was super carb/sugar dependent and so knew the TWT was going to be tough. It was. Was actually horribly sick and really nauseous for about 6 days but thankfully that passed, never want to experience that sort of withdrawal again. I noticed that from about day 8 the near constant cravings and the regular gnawing feeling in the pit of the stomach have come back. I am now on day 13 and those feelings have intensified. I am mystified as to why that might happen as I have tried to be 100% compliant, making sure I eat plenty and get lots of good fats for satiety. Is there something I am missing? I am nervous about reintroducing anything even moderately sweet or with a higher GI for fear of making the cravings unbearable (which is where I was before the TWT) and I am also not sure that I am ‘stable’ enough to assess the effect of reintroducing some of these foods. I was wondering if you have come across anything like this before, particularly with people who have had a terrible relationship with sugar? Do you ever recommend continuing beyond the 2 weeks? I suppose I am asking how stable do you feel you need to be to begin reintroducing slightly higher GI foods?
As far as non-caloric sweeteners go, we strongly discourage their use primarily because the reason we use them is because they are so similar to sugar. In fact, they are so similar that the body reacts to them as it would to sugar: by raising insulin levels in anticipation of sugar. But when that sugar does not arrive, all that insulin just hangs around in the bloodstream, increasing appetite and generally creating all sorts of chaos.
